About this recipe
Chia seeds form a gelatinous-like texture when mixed with liquid and can be used as an egg replacement in some vegan recipes (use 1 part chia to 3 parts water).
Ingredients
400ml coconut milk
1 tsp vanilla extract
1 ½ tbsp maple syrup (optional)
3 tbsp finely shredded coconut
½ cup chia seeds (white or black) + 1 extra tbsp
Instructions
Step 1
Shake the can of coconut milk and empty it into a bowl. Add the vanilla extract and maple syrup (if using) and stir until blended. Add in the coconut and the chia seeds and stir again until blended.
Step 2
Keep refrigerated overnight, or until it sets, then serve with fresh berries.
Nutrition
Black and white chia seeds have a very similar nutritional profile and can be used interchangeably. Both are a great source of essential fats and soluble fibre, which is beneficial for gut health.
