Popular for snacking on, when blended, cashews add a creamy texture to sauces, soups and dips.

Cashew ‘cheese’ sauce

Ingredients

  • 2 cups raw cashew nuts

  • 2 tbsp nutritional yeast

  • Pinch of turmeric

  • 1 cup water

  • 2 tsp Dijon mustard

  • Salt & pepper to taste

Instructions

Step 1

Put all the ingredients into a food processor and blend until well mixed.  Serve hot or cold.


Nutrition

Cashews are very versatile and can also be used to make dairy-free ‘milk’ and ‘cheese.’  Nutritional yeast can be found in health food stores and provides a source of vitamin B12 which is often lacking in vegan diets.
