About this recipe
Broccoli is one of the ultimate ‘superfoods,’ containing such a wide variety of nutrients to support multiple body functions. Enjoy it raw in this salad, which takes just minutes to make.
Ingredients
250 grams broccoli, cut into florets
100 grams carrot, roughly cut into pieces
1 red apple, cored and quartered
1 slice of red onion (approx 30g)
100 grams plain natural Greek yoghurt
Juice of half a lemon
25 grams walnut halves
Instructions
Step 1
Place all the ingredients in a food processor and chop for 5 to 10 seconds until you reach the desired chunkiness. Season to taste and serve immediately.
