Chia pudding

Chia seeds form a gelatinous-like texture when mixed with liquid and can be used as an egg replacement in some vegan recipes (use 1 part chia to 3 parts water).

Step by Step Instructions

  • 400ml coconut milk
  • 1 tsp vanilla extract
  • 1 ½ tbsp maple syrup
  • 3 tbsp finely shredded coconut
  • ½ cup chia seeds (white or black) + 1 extra tbsp
Step 1

Shake the can of coconut milk and empty it into a bowl.  Add the vanilla extract and maple syrup and stir until blended. Add in the coconut and the chia seeds and stir again until blended.

Step 2

Keep refrigerated overnight, or until it sets, then serve with fresh berries.


Black and white chia seeds have a very similar nutritional profile and can be used interchangeably.  Both are a great source of essential fats and soluble fibre, which is beneficial for gut health.
