Broccoli is one of the ultimate ‘superfoods,’ containing such a wide variety of nutrients to support multiple body functions. Enjoy it raw in this salad, which takes just minutes to make.

Ingredients

Step by Step Instructions

  • 250 grams broccoli, cut into florets
  • 100 grams carrot, roughly cut into pieces
  • 1 red apple, cored and quartered
  • 1 slice of red onion (approx 30g)
  • 100 grams plain natural Greek yoghurt
  • Juice of half a lemon
  • 25 grams walnut halves
Step 1

Place all the ingredients in a food processor and chop for 5 to 10 seconds until you reach the desired chunkiness. Season to taste and serve immediately.
